Menu Plan Monday 1/11

This week, I’m trying to cook from my freezer and fridge, taking advantage of what I already have on hand.  Hopefully this will result in a smaller grocery bill and a very tasty week of eating. Here’s this week’s plan:

SundayBacon & Egg Salad with Honey Mustard Dressing

Monday —  Health Bent’s jerk chicken with pineapple

Tuesday — Fish Tacos with Lime Slaw and Avocado Sauce
A friend from the gym shared this recipe and I started salivating.  I plan to make it with haki loins from Costco (I’m not a fan of tilapia as a healthy protein source).

WednesdayCrockpot Balsamic Pot Roast

Thursday — roast chicken + roast veggies

Friday — tbd/cheat night

Note: all meals are generally paleo/primal, except as noted otherwise.
