Menu Plan Monday 1/5

Happy New Year!  Life has been so busy, I’ve had a hard time getting menu’s posted.  But with the new year, I resolve to do a better job of sharing our menu plans, in hopes that a renewed commitment to clean eating will benefit others, as well as our family.  Here’s this week’s plan:

SundayTacos — I was out of the TJs packets, so I used some BBQ seasoning rub instead.  Not as spicy, but still tasty

MondayBalsamic Garlic Roasted Pork LoinBrussels Sprouts with Vinegar-Glazed Red Onions

Tuesday — Chicken Curry w/Tomato Onion Gravy — may serve over cauli rice or regular rice

WednesdaySausage Pepper & Onions

ThursdayLemon Garlic Baked Shrimp  — may serve over spaghetti squash

Friday — tbd/leftovers/cheat night

Note: all meals are generally paleo/primal, except as noted otherwise.
