Menu Plan Monday 11/2

Here’s this week’s plan:

Sundaystuffed pepper (only Mike wants this — will stuff a pepper with leftover taco meat) / white bean chicken chili (this recipe has beans – skip them and increase the chicken to keep it paleo)

Monday — sausage, pepper, and onion saute
Note, I won’t bother grilling the sausages or veggies; I will cook the sausage by boiling and then saute everything in a skillet or crockpot.

Tuesdayprime rib! w/broccoli salad
I’ve had this in my freezer forever since getting a bulk grassfed beef order.  This is the week to enjoy it.  Note:  I will follow Simply Recipes directions for cooking:  15 minutes on 500, then turned down to 325 and an additional 13-15 min per pound to get a nice rare cook.

WednesdayDIY chicken stir fry — will whip this up with whatever veggies I have on hand.

Thursday — Pan Seared Scallops with Bacon & Spinach

Friday — TBD/cheat

Note: all meals are generally paleo/primal, except as noted otherwise.
