Menu Plan Monday 11/4

Sheesh, I can’t believe I haven’t posted this yet.  Sorry so late, but better late than never.

Yay, my favorite football team won!  And it’s November! Zoiks… things get busy around here with a series of birthdays and holidays…. starting with my beloved who turns 40-something this Thursday.   Here’s how we’re eating this week:

MondayGarlic-Balsamic Marinated Pork Loin + Pan Roasted Brussel Sprouts

TuesdayBacon Jalapeno Butternut Soup / leftovers
My kids don’t like the soup, so I made it spicy and let them eat leftover chicken and broccoli

WednesdayHoney Jalapeno Baked Chicken Thighs + Asparagus
I tweak this Civilized Caveman recipe by baking the thighs, covered in sauce in the oven instead of grilling.  Asparagus will either be roasted in the oven after the chicken finishes or I will steam it in a pot on the stovetop

Thursday — Birthday Dinner!  Chicken Souvlaki w/roasted veggies + flourless chocolate cake + strawberries and whipped cream for dessert
Note: the dessert calls for sugar, you can sub coconut sugar or honey.  There is also a strong possiblity I take the easy road and buy a flourless chocolate torte from Trader Joes… Also, we usually make our whipped cream with real dairy cream, preferably grassfed.

Friday — tbd/leftovers

Note: all meals are generally paleo/primal, except as noted otherwise.
