Happy day after St. Patrick’s Day… it’s one week til spring break and I am not prepared! Hoping to figure out some kid fun and share it with you this week. Here’s what’s cookin at my house
Monday — Italian Sausage & Peppers & Onions + tbd veggies
My kids for some srange reason hate cooked peppers and onions so I might take pity on them and roast some asparagus too (on sale for 1.99/lb at Wegmans this week!)
Tuesday — Roast Chicken + Artichokes
Wednesday — Chicken & Shrimp Tacos
I’ve started combining these two so that my non-shrimp eaters can enjoy shrimp and I dont burn through 2lbs of shrimp at a time.
Thursday — Something meaty – sloppy joes or hamburgers + sweet potato fries most likely
Friday — TBD
