Another week, another meal plan. We ate pretty well last week and I’m looking forward to this week’s eatin’. The kids have been clamoring for dessert just about every night of the week, so I went ahead and planned a few desserts.
Here’s the plan, Stan:
Sunday – Chicken Enchilada Pie + Magic Cookie Bars
Monday – Orange Glazed Pork chops + broccoli + corn on the cob w/Strawberry angelfood cake for dessert!
Safeway: corn 8/$2 (weekend price), angelfood for $2.50, strawberries are $3.40/2lbs @Wegmans and $5.99/4lbs at Safeway
Tuesday – RR Super Sloppy Joes Tacos/Salad + deviled eggs (maybe)
I also am supposed to bring a hot food to a Bible Study brunch… still TBD but I’m thinking this casserole quiche.
Wednesday – Grilled Steak Salad or possibly chicken salad
Thursday – Shrimp or Scallops & Pasta? I was trying to find a good recipe that uses bay scallops (I bought some a bit ago and can’t decide how to use them), but I may just go with our old stand-by of shrimp scampi w/angelhair pasta
Friday — homemade pizza – I’ll probably be cooked out by then, this could easily turn into leftovers of chicken nuggets.

hey meanest momma, if you do make the casserole for tuesday’s brunch… make sure you use ALL that milk! One time, I skimped (’cause I didn’t plan ahead) and the results were NOT as yummy.
I has just found your blog and you are a real inspiration. I am new to the paleo diet and I am still trying to find a version that fits me and my family. Do you include corn in your diet regularly?
Pam, this is a very old menu plan, prior to my paleo eating days. The more recent menu plans, since ~January 2013 reflect paleo choices
To answer your question — no, we do not eat corn as part of a paleo diet. We will enjoy a few corn based products (tortilla chips) on “cheat days”, but do not consider corn part of a healthy diet.
