PBC Salad

This recipe will always make me think of my mom.  I’m not sure where she got it and the first time she made it (I was a teenager), I wasn’t sure I’d like it.  Now it is one of my “must have’s” for special family dinners (Christmas, Easter, etc.).  The name refers to it’s content “Peas, Beans and Corn Salad”.


  • 1 can green peas (Le Seur brand recommended)
  • 1 can french style green beans
  • 1 can shoepeg corn
  • 1/4 cup onion, diced
  • 1 cup. green pepper, diced
  • 1 jar pimento
  • 1 cup celery,  diced


  • 1/2 cup sugar
  • 1/2 cup oil
  • 1/2 cup vinegar (I use apple cider or plain distilled vinegar)


Drain cans and combine veggies in a bowl.   In a separate bowl, combine dressing, mixing well.  Pour dressing over salad.  Mix to combine.

This is a great dish to make ahead, it tastes even better the next day.
