Almond Flour Pancakes

Last Friday night, we had breakfast for dinner in the form of these almond flour pancakes, along with bacon, fruit, and an omelet.  The recipe came from the owner of our Crossfit gym, a guy whose nickname is “Chef”:

Modifications:  I did not have “dried Valencia orange rind”, so I simply zested some peel of a regular ole orange.   In lieu of “chestnut honey”, I used raw honey.

Verdict:  the kids ate them without complaint.   For Mike & I, we weren’t as wowed.  They were good, but almost “too” gourmet.  The orange flavor was a little too intense, not sure if that was due to my substitution or if it was supposed to be that strong.   Also, the recipe was a lot of work to put together, more than I wanted on a Friday night after a week of cooking.

Next time, I will try a different pancake or waffle recipe and report back.

    Yikes, Kendra!

    Here is the credo, “I can change the recipe OR complain about the recipe, not both.”

    I used to have occaisonal folks in our restaurant in NYC place an order like this, “I’ll have the beef, with the sauce from the lamb and the vegetables from the halibut… and could you replace the parsnips with potatoes off the guinea hen?” and then complain that the dish “didn’t quite fit together!” 😉

      Fair enough. I know possess the Valencia orange rind — where does one find Chesnut Honey? Lemme know and I’ll give them another shot 🙂
