Sweet & Salty Fudge Bombs

Sweet & Salty Fudge Bombs Recipe from The Clothes Make The Girl I was looking for something paleo-ish and desserty to bring to our gym’s post-challenge party and saw these and thought they fit the bill.   What’s nice is they don’t contain added sugar/sweetners, although the dates bring plenty of sweet to the table....

Paleo Southwest Bacon Burgers

This was a super quick and easy dinner I threw together on a busy Sunday night. I thawed 2lbs of (grass-fed) ground beef and then added 4-5 Tbsp of homemade onion soup mix. Mix by hand, then form into patties (wider and thinner is better than thicker). Cook on the grill over medium heat...

Coconut Curry Shrimp Stir-fry

Coconut Curry Shrimp Stir-Fry with Cauli-Rice The stir fry recipe came from Nourishing Origins: http://nurishingorigins.wordpress.com/2011/11/30/coconut-curry-shrimp-bowl/ My only substitution was to use asparagus instead of green beans. The Cauli Rice recipe came from Elana’s Pantry: http://www.elanaspantry.com/cauliflower-rice/ Verdict:  Both dishes were good and I would make them again.  I really liked the cauliflower rice, the kids...

A Very Paleo Valentine’s Dinner

We managed to chase away the sickies just in time to enjoy a yummy, albeit low-key Valentine’s dinner. I made a delicious shrimp stir-fry with peppers, asparagus, onions, and garlic. Mike steamed some more asparagus and grilled up some delicious grass-fed flat iron steaks. Dinner was divine!

Fun with Plantains — Sweet and Savory

I bought some plantains recently and decided to figure out how to cook them.   After perusing Pinterest and other corners of the web, I tried a couple of recipes. The first recipe called for a green plantain, and I found the recipe on A Cozy Kitchen. Tostones Ingredients: 1 green plantain 1/4 cup coconut...

Almond Flour Pancakes

Almond Flour Pancakes Last Friday night, we had breakfast for dinner in the form of these almond flour pancakes, along with bacon, fruit, and an omelet.  The recipe came from the owner of our Crossfit gym, a guy whose nickname is “Chef”: http://www.cfrubicon.com/recipe/mouthgasmic-almond-flour-pancakes/ Modifications:  I did not have “dried Valencia orange rind”, so I...

Paleo Pot Roast

We just got our new order of bulk beef, but I had few cuts left over from the old stash that I still needed to use up.  So, I began scouring the web for a pot roast recipe to make with my bottom round roast.   I borrowed from a couple of places for inspiration...

Paleo Southwest Scramble

(Paleo) Southwest Scramble I saw this recipe on Multiple Delicious and thought it sounded like a great Paleo Saturday morning breakfast: http://www.multiplydelicious.com/thefood/2012/01/southwest-scramble/ Actually, I planned to make it for Friday night dinner (along with almond pancakes), but never got that far.  So I made it today.  I had to adapt her recipe a bit...

Ginger Citrus Roast Chicken

(Apologies, for the terrible, unappetizing picture — a food photog I am NOT.) Ginger Citrus Roast Chicken We get fresh chickens from a local “chicken man” and since the birds are smaller than the super-sized birds you find in the grocery store, we usually cook two at a time.   This time, I decided to...
