Broccoli Salad

  • Salad:
  • 3-4 crowns of broccoli, cut into bite size pieces
  • ¼c.  red onion, chopped
  • ½c. raisins
  • 4-6 slices of bacon, cooked and chopped, or bacon bits
  • 6-8 oz mozzarella cheese, shredded
  • Dressing:
  • 1 cup mayo  (or more to taste)
  • 2 Tbsp sugar (or more to taste)
  • 3 Tbsp vinegar – white, apple cider, or red wine — they are all good!
  1. Combine whatever combination of salad ingredients feels right in a large bowl.
  2. Combine dressing in a separate bowl (I use a large measuring cup). I start with the amounts listed above, then adjust to taste. You went to taste the tang of the vinegar, along with the sweetness of the sugar, and not have it too mayonnaisey.
  3. When you have the dressing the way you like it pour over salad and toss to coat.
This salad gets better with time, so it is great to make ahead the night before and let the flavors meld. I usually use turkey bacon when I make this, but you could use real bacon or bacon bits or leave it out. This dish can also be made with various nuts (like sliced almonds) or seeds (like sunflower seeds).
