Menu Plan Monday 8/31

It’s been a busy summer and menu planning fell by the wayside.  I’m trying to get organized just in time for the return of school.  Here’s this week’s plan:

SundayHoney Mustard Chicken + Broccoli Slaw

Monday — Hearty Spaghetti Sauce over Baked Spaghetti Squash + salad

Tuesday — Chicken Fajitas + Guacamole & Salsa

Wednesday Simple Cedar Plank Salmon w/lemon + Quinoa Cucumber Tomato Salad
*Quinoa is not “paleo” but it is a healthy gluten-free grain that makes a yummy salad

Thursday — Roast – Eye of Round Roast + leftover veggies or salad

Friday — tbd/leftovers/cheat

Note: all meals are generally paleo/primal, except as noted otherwise.
