Menu Plan Sunday 5/31

It’s the last day of May.  We have three more weeks of school and then it’s official summer.  In the meantime, life is ramping with summer activities already starting (swim team) as well as spring activites still going strong (soccer, baseball, tennis, etc.).  I’m trying to keep dinners as simple as possible, taking advantage of make ahead meals (crockpots) or simple prep where possible.  Here’s this week’s plan:

Sundayhamburgers  + sweet potato fries

Monday — Korean Short Ribsvoltaggio aparagus

TuesdayAsian chicken chicken salad

Wednesdaymahi mahi with mango salsa + green beans
Will either grill or pan sear the fish

Thursday — chicken souvlaki
the marinade includes white wine, sauce includes greek yogurt; can be made with pork or chicken

Friday — tbd/cheat

Note: all meals are generally paleo/primal, except as noted otherwise.
