Menu Plan Tueday

Argh, I’ve been less organized now that life is so busy, but in reality, now’s when I need to have a better grip on dinners.  Life will be frenzied until schools out —  spring sports are still underway and swim team has already begun! Here’s this week’s plan:

Monday — anywhich way pot roast
I had a 3lb cut of chuck roast which I simply seasoned with whatever sounded good:  salt & pepper and oregano.  Then I dumped some (~1/4 c?) balsamic vinegar and turned it on low in the crockpot in the morning.  In mid afternoon I added in some cut up potato and onion and let it cook another 2+ hours.  It turned out quite yummy and was an easy/no stress dinner.

Tuesday — tacos/taco salad  — will eat our tacos over romaine dressing and maybe add some salsa for “dressing”.

Wednesday — pork shoulder/bbq
This will be another easy/no-stress meal.  I will season the pork shoulder with a bbq rub I have on hand and let it cook for a long time.  Then shred and serve with a Trader Joe’s all natural BBQ sauce (note:  the sauce does have a fair bit of sugar, so not ideal for a paleo perfectionist/Whole30 eater).

Friday — stuff

Note: all meals are generally paleo/primal, except as noted otherwise.
