Menu Plan Monday 2/9

Happy Monday! Here’s this week’s plan:

Sundaybacon & egg salad + chicken fingers

Monday — italian sausage + pepper/onion saute

Tuesdaybaked shrimp scampi + asparagus served over spaghetti squash
I’m excited to try this simple scampi recipe (minus the baguette, of course).  I will cook my spaghetti squash first, then bake my shrimp and asparagus dishes together in the oven.

Wednesdaysloppy grokky joes + broccoli

Thursdaysweet  & tangy chicken thighs
Baked at 375° for ~30 minutes instead of grilled (check to make sure internal temp rises to 160°

Friday — tbd/leftovers/cheat night

Note: all meals are generally paleo/primal, except as noted otherwise.
