Happy Monday! Here’s this week’s plan:
Monday — italian sausage + pepper/onion saute
Tuesday — baked shrimp scampi + asparagus served over spaghetti squash
I’m excited to try this simple scampi recipe (minus the baguette, of course). I will cook my spaghetti squash first, then bake my shrimp and asparagus dishes together in the oven.
Thursday — sweet & tangy chicken thighs
Baked at 375° for ~30 minutes instead of grilled (check to make sure internal temp rises to 160°
Friday — tbd/leftovers/cheat night
