Christmas is coming like a freight train and it’s all I can do to keep from getting flattened. I am hosting Christmas dinner again, which I always do and love having family over. My menu will be almost identical to years past and be a mixture of paleo and non-paleo items. We try and mostly eat clean, but there is plenty of imperfection that happens this time of year.
Here’s the plan:
Christmas Morning
Monkey Bread — a sugary grain-filled tradition that is sure to put us in a a diabetic coma.
Fruit Salad — #paleo even tho they are not in season, I splurge and get our favorite fruits: strawberries, pineapple, kiwi, blueberries, cantaloupe and banana.
Carmelized Onion Frittata — #paleo
Mid-Day / Snacks / Munchies
Ham & Cheese Sandwiches
Veggie Tray and other leftover munchies from Christmas Eve
Shrimp Cocktail
Christmas Punch – Ginger ale w/TJ’s Orange Mango Juice or Cranberry Cocktail
Christmas Dinner
Prime Rib with Roasted Garlic and Horseradish Crust — #paleo
Homemade Horseradish Sauce — #paleo (using homemade mayo)
Make Ahead Mashed Potatoes — in the crockpot
Corn Pudding
Roasted Asparagus — #paleo — these go in the oven while the prime rib is resting.
Broccoli Salad — #paleo — I’ll prolly add some paleo mayo in the dressing as well
PBC Salad
Crescent Rolls
Dessert
TBD — mostly leftover treats from Christmas Eve. I’m hoping we’ll be stuffed by this point!
