Dang if we haven’t been busy! In addition to celebrating Thanksgiving, we’ve just celebrated my daughter’s 10th birthday, and my birthday is right around the corner! Life is flying by — I hope to put out some updates on those activities, but we’ll see if I can get to it quickly. In the meantime, here is this week’s menu plan.
Sunday — Texas Chili
Monday — Balsamic Pork Chops with Brussel Sprouts
Tuesday — Coconut Shrimp Soup
Wednesday — Easy Grilled Chicken with Green Beans
Thursday — Italian Meatballs over Spaghetti Squash
Friday — TBD
On Saturday, I return to Cold War, my first Crossfit competition. This year, I’m competing on a Master’s team with other 40+ year olds. I turn 40 this week, so I can’t wait! 🙂
