Menu Plan Monday 10/20

I’ve got the weeknights figured out, I just need to figure out what to make tonight.   Here’s how the week looks:

MondayChicken Souvlaki coupled with veggie kabobs (potatoes, onions, peppers)
Note: souvlaki marinade includes white wine and canola oil (I sub extra light olive oil); tzatziki sauce made with greek yogurt (I use grassfed plain yogurt)

TuesdayPan Roasted Sirloin Strip Steak w/Chimmichuri sauce + sauteed mushrooms + sweet potato fries + mixed green salad w/balsamic dressing
It’ll be a miracle if I actually prepare all of this… but it all sounds yummy right now…

WednesdayItalian sausage, onions & peppers + tomato/onion/avocado salad

ThursdayLemon Dill Salmon + green beans w/bacon

Friday — we are attending our box’s Halloween Paleo Potluck.  I will most likely be bringing Bacon Wrapped Dates and a dessert.  I’m considering:
German Chocolate Fudge Balls
Paleo SnickerDoodles
Elana’s Gingersnaps

Note: all meals are generally paleo/primal, except as noted otherwise.
