Menu Plan Monday 10/7

Hello friends!  Sorry I have been slacking — I participated in my first Ragnar relay race this past weekend, and all of my mental and physical energy last week went towards preparing for it.   It was a blast and I hope to put up a post soon with my experience.  In the meantime, it’s back to motherhood and resuming my duties as chief chef and meal planner.

Here’s what’s cooking this week:

MondayItalian Sausages with onions and peppers + Roasted Baby Artichokes
Skip the cheese topping on the ‘chokes to keep it whole30/paleo

TuesdayEye of Round Roast w/horseradish cream sauce + sauteed mushrooms + salad + rice + gingersnaps for dessert!
Will sub plain (grassfed) yogurt for the sour cream in  horseradish sauce; rice is more for the kids, and not paleo

WednesdayPaleo Chicken Tenders + Broccoli

ThursdayCoconut Shrimp Soup

Friday — TBD

Note: all meals are generally paleo/primal, except as noted otherwise.
