Hello friends! Sorry I have been slacking — I participated in my first Ragnar relay race this past weekend, and all of my mental and physical energy last week went towards preparing for it. It was a blast and I hope to put up a post soon with my experience. In the meantime, it’s back to motherhood and resuming my duties as chief chef and meal planner.
Here’s what’s cooking this week:
Tuesday — Eye of Round Roast w/horseradish cream sauce + sauteed mushrooms + salad + rice + gingersnaps for dessert!
Will sub plain (grassfed) yogurt for the sour cream in horseradish sauce; rice is more for the kids, and not paleo
Thursday — Coconut Shrimp Soup
Friday — TBD
