Holy moly, it’s June! And the weather lately has felt like summer. Life is getting busy with end of year school stuff plus pool time and summer activities. I’m trying to put together a menu that easy and light and in some cases, pool friendly. Here’s what I’ve got:
Monday — High Pockets Paleo “Pasta”
Tuesday — Honey Jalapeno Chicken Thighs
Wednesday — Souvlaki
Note: marinade includes white wine, sauce includes greek yogurt; sub light olive oil for canola
Thursday — Shrimp Tacos
Skip the sour cream sauce and use a lettuce wrap instead of tortilla
Friday — tbd (cheat night)
Saturday — Tutti Fruity Kabobs
Note: all meals are generally paleo/primal, except as noted otherwise.
