We are enjoying a very low-key, do nothing kind of weekend. It’s been nice. I did get my shopping done today, so I’ve got our menu planned as follows:
Sunday — Paleo Texas Chili — modified slightly to work with with what we have on hand.
Monday — Chicken Zoodle Soup
I may split my batch and skip the zoodles and ‘shrooms for my picky kids. They’d get rice in their batch instead.
Tuesday — Balsamic Glazed Pork Chops + green beans + salad
Wednesday — Hearty Spaghetti Sauce over Baked Spaghetti Squash + salad
Thursday — Coconut Shrimp Soup
Friday — burgers + sweet potato fries .. or pizza 😉 #cheatday
