Menu Plan Monday (on Sunday)10/21

It’s been a beautiful fall weekend.  We had a great time at Cox Farms on Friday and a lazy, low-key weekend.  Aside from the Redskins losing, it’s been a near perfect weekend.  Here’s this week’s menu plan.  Everything is Paleo/Primal, except as noted.

SundayPaleo Onion Soup Burgers + Oven Baked Sweet Potato Fries + Salad

MondayShrimp Tacos — use a lettuce wrap instead of tortillas; I’m going to use grass-fed plain yogurt instead of sour cream for the sauce.

TuesdayRoast Chicken + Green Beans

WednesdayBBQ + peas & corn + salad
The seasoning rub contains some sugar — skip it or use succanat.  We also use Trader Joe’s BBQ sauce which has some sugar in it.  Peas and corn are not paleo, but the kids love’m

ThursdayLemon Dill Salmon + steamed artichokes

Friday — We are having a Halloween/Potluck Paleo Party at our Crossfit box and I can’t wait!  I’ll be bringing Marinated Flank Steak with Chimichurri Sauce  and some kind of Paleo Treat (still TBD).  All of these recipes sound tempting: Ginger Molasses Cookies,  Snicker Doodles, Paleo Chocolate Chippers, or Paleo Ginger Snaps
