Menu Plan Monday (on Sunday) 9/9

Fall has arrived, football is on TV and I’m a happy camper!   Here’s what’s eatin’ at our house this week:

Everything is paleo/primal, except as noted.

Sunday — Primal Chili
I’m loosely following this recipe combined with this one — lots of meat and no beans.   Note to self:  don’t make it so spicy for the kids!

MondayRed Thai Coconut Shrimp Stir Fry
I’m going to make a bigger portion and include some chicken and asparagus in this dish.  Also, we will use full fat coconut milk.  I’ll also probably make some rice for the kiddos.

TuesdayMeaty Spaghetti Sauce over Spaghetti Squash + salad (if I get around to buying lettuce)

WednesdayJalapeno Dijon Chicken Thighs + Broccoli

ThursdayCrockpot BBQ + Mango Slaw
Note: rub contains some sugar, feel free to omit.  I use Trader Joe’s All Natural BBQ sauce, which also contains some sugar.

Friday — Breakfast for dinner: Almond Flour Pancakes + Carmelized Onion Frittata

Note:  My kids do not eat clean for breakfast and lunch.  We are trying to move them to healthier choices but haven’t gotten there yet.  This is what we planned for this week.

Lunch Ideas:

Monday:
W – Tuna in Pita Pocket + Watermelon
S – Tuna in Pita Pocket + green grapes

Tuesday:
W & S – Buy

Wednesday:
W – PB&J – no crust (use shape) + grapes
S  – scrambled eggs + bacon

Thursday:
W – Turkey + Swiss Roll-up (2 slices cheese, in tortilla) +
S – Tuna in Pita Pocket + Pickle

Friday:
W – Angelhair pasta + butter + garlic salt + parm chs + applesauce
S –  scrambled eggs in thermos + bacon

Snack Ideas:

  • Popcorn
  • Beef Jerky
  • Dried Mango
  • Laughing Cow Cheese + Crackers
  • Cinnamon Rasin Bagel + Butter (S)
