I’m trying to stay ahead of the curve this week. Lord willin’, here’s this week’s menu:
Monday — Souvlaki (w/Chicken) + Bacon Brussel Sprouts
Note: Souvlaki needs a few subs to keep it paleo
Tuesday — Jalapeno Dijon Chicken Thighs + Voltaggio Asparagus
Wednesday — Crockpot BBQ + Mango Slaw
Note: rub contains some sugar, feel free to omit. I use Trader Joe’s All Natural BBQ sauce, which also contains some sugar.
Thursday — Shrimp Scampi w/Zucchini Noodles
Friday — Grilled Flat Iron Steak with Chimichurri Sauce + salad
