We enjoyed a wonderful Father’s Day yesterday — a partially Paleo meal at the always delicious Mike’s American Grill, followed by a family dinner of grilled chicken thighs, steamed artichokes and salad. This is our last week of school and the schedule is crazy! Here’s what I hope to serve for dinner each night.
Monday — High Pockets Chicken (skipping the “pasta” this time) + fruit
Tuesday — Ground Beef Tacos
Wednesday — Chinese Chicken Salad + grilled asparagus
Thursday — Hot Dogs + Corn + Fruit <– Birthday boy dinner (not exactly paleo!)
Friday — Chopped Salad with Bacon Honey Mustard Dressing, Grilled Ahi Tuna + Grilled Shrimp on the Barbi.
