Menu Plan Monday 6/18

We enjoyed a wonderful Father’s Day yesterday — a partially Paleo meal at the always delicious Mike’s American Grill, followed by a family dinner of grilled chicken thighs, steamed artichokes and salad.   This is our last week of school and the schedule is crazy!  Here’s what I hope to serve for dinner each night.

MondayHigh Pockets Chicken (skipping the “pasta” this time) + fruit

TuesdayGround Beef Tacos

Wednesday Chinese Chicken Salad + grilled asparagus

Thursday — Hot Dogs + Corn + Fruit <– Birthday boy dinner (not exactly paleo!)

FridayChopped Salad with Bacon Honey Mustard Dressing, Grilled Ahi Tuna + Grilled Shrimp on the Barbi.
