The Meanest Paleo Bars

A friend shared this recipe when we first did a Paleo Challenge at the gym.  Allegedly, they are knock-off “Lara Bars”, although I’ve never had a Lara Bar so I couldn’t swear to that.  However, it is a great way to fight the afternoon munchies or to take on the trail.   Here is my version of the recipe.  Enjoy!

The Meanest Momma’s Paleo Bars

Adapted from


  • ¼ cup almond butter
  • ¼ cup coconut oil (melted)
  • 2 tsp vanilla
  • 1 egg
  • 1 cup almond flour
  • 3 tbs honey
  • 1 tsp saigon cinnamon
  • 1 cup toasted whole almonds, chopped
  • 1 cup toasted pecans, chopped
  • ¼ cup toasted sunflower seeds
  • ¼ cup toasted pumpkin seeds
  • ¼ cup toasted pistachios
  • 1 cup dates, chopped (or other unsweetened, dried fruit)
  • 1/2 cup shredded coconut, unsweetened


I buy my nuts raw (best prices are at Costco), so the first thing is to toast the nuts and seeds.

Turn broiler onto low and place all the raw nuts and seeds on a rimmed baking sheet.  Broil for a minute or two until nuts start to brown — pay close attention, it doesn’t take much for them to burn and burnt nuts taste much worse than toasted nuts!

Set oven to 350F.

Combine the first seven ingredients in a large bowl or stand mixer.

Add the remaining ingredients and stir/mix until well combined.

Press mixture into a 9×13 baking dish (no need to grease).  Use a spatula to spread it around until even and flat.

Bake for 12 minutes at 350.  As soon as the edges begin to brown, it’s done.

Let cool and then slice.  Store in airtight container.

Yield: 24 pieces, approximately 2″x 2.5″ (4 columns by 6 rows).

    Love these! I make them all the time, and everyone who eats them loves them.Sometimes I spread a teaspoon of all-fruit (is that paleo?) On top so it’s like an almond butter and jelly bar.

    I switch the spices up sometimes. Today I put a whole star anise, 10 all spice berries, 5 cloves, a cinnamon stick, the black seeds from inside 3 cardamom pods in the spice grinder (basically the flavors that would be in a masala chai) and OMG, it’s delicious!
