Menu Plan Monday 4/16

We had a nice, low-key weekend, except for Mike who competed in a Primal Mud Run — and came in first place for his age group!

Looking forward to a week of eating clean.  Here’s the plan.  Everything is paleo/primal or adaptable.

Monday Cilantro Lime Flank Steak w/Oven Baked Sweet Potato Fries + Salad
I omit the sugar in the fries and use coconut oil

TuesdayCrockpot BBQ + peas & corn for the kids (not paleo) / grilled zucchini
Soccer practice means dinner will run late, so I’m just going to reheat some leftover BBQ I have

Wednesday— Jalapeño Dijon Grilled Chicken + sauteed mushrooms + cauli rice

ThursdayTaco Thursday

Friday — TBD salmon (probably grilled on a cedar plank) + roasted asparagus

SaturdayTutti Fruity Kabobs + Sweet & Salty Paleo Bites
The kabobs need some substitutions to keep them paleo.  I’m going to use light olive oil instead of veg oil, cut the honey to 1/4 c. and use coconut aminos instead of soy sauce.
