It’s already well-documented that I love deviled eggs. When our gym organized a potluck Paleo party on St. Patrick’s Day, I wondered if I could come up with something green to bring.
Inspiration struck when I realized Deviled Eggs + Avocado = Awesome. A quick Google search helped me find this fantastic recipe from Crossfit Fire, which I happily share with you.
Bacon Avocado Deviled Eggs
Slightly adapted from http://crossfitfire.com/amazing-bacon-avocado-deviled-eggs/
Ingredients:
6 hard boiled eggs, peeled
4 slices of bacon, cooked and crumbled nice and small
1 avocado, diced
3 Tbsp Paleo Mayo
2 tsp lemon juice
1/4 tsp garlic powder
1/8 tsp cayenne pepper or paprika
1/4 cup fresh chopped cilantro (optional garnish)
Sea Salt to taste
Directions:
Cut eggs in half lengthwise and carefully scoop out yolks. Mash yolks with a fork. Stir in diced avocados, mayonnaise, lemon juice, garlic powder, cayenne pepper, bacon and salt to taste. Fill egg whites with yolk mixture and place on a serving plate. Sprinkle with cayenne lightly, or sprinkle with the fresh chopped cilantro.
Notes
The only problem I had with this recipe is it resulted in way too much delicious filling and not enough egg white shells. You can leave a couple of egg yolks out, or be extra generous when doling it out into your egg halves, or plan on eating the excess with a spoon :).
Also — I learned after the fact that adding a small amount of ascorbic acid will make brighten up your avocado/guacamole and keep it from turning brown. I plan to try this next time.
Another Tip
When bringing the eggs to a party, I found a heavy duty Chinette plate worked well. Putting a bowl upside down in the center helped keep the plastic from smushing the tops of the deviled eggs.

Lemon juice is just full of ascorbic acid as is lime juice. If you want to brighten things up you can just add a bit more. It looks to me as if a little lime juice would make this recipe even more appetizing.

This is, frankly, awesome looking. I’m seriously considering bringing this to my next area pot luck, even if I’ll sub lime for lemon (which to my mind meshes better with avocado).
Um, of course I’ll test drive a smaller batch, first.. Yeah, got to try it myself.. Some of my fave foods here. Eggs. Bacon. Avo.

Amazing! I used turkey bacon and made it extra crispy. I brought these to my office today and everyone loved them. A “foodie” told me this was the best deviled egg he’d ever had and asked me to send the recipe to his wife.

Wouldn’t the lemon juice (or lime if that is what you choose to use) produce the same result as the ascorbic acid? Going to make these for a bbq dinner we are going to tomorrow night…looks delicious!

Lemon or lime juice does act similarly, but I’ve found the ascorbic acid seems to work better (maybe it’s more potent?). Also, it comes in handy when you are out of limes or only need a tiny pinch and not a whole lime.

We made these tonight and used the leftover filling as a spread on bacon sandwiches. We used lime instead of lemon and added just a touch of vinegar from Pepperoncini’s. YUM!!

I just made these- they are in the fridge for a lunch date later- but I tasted the extra filling and OMGoodness! Mmmmmmmmm! Cant wait to show up with these as I usually buy a bag of chips and call it a day- These are my new ‘go to’ pot luck dish- Thanks for sharing!
Yummy! I had everything in the house (or as in the case of lemon juice–on the tree.) I’m having to control myself not to eat all that I made (plus the extra that was too much for the whites.) Thank you for a wonderful alternative.
