Menu Plan Monday March 5th (still Paleo!)

So.. the paleo challenge is officially over!  My gym will be announcing the winners soon and I will certainly be reporting here how I did.   Now that it’s over, I don’t “have” to eat Paleo, but will continue to do so, for the most part.  I feel comfortable living in the 80/20 rule, with permission to cheat once in a while.   So, after celebrating with a big binge meal with some Crossfit friends last night, I am back on the wagon and eating clean this week.   Here’s the menu, with all meals paleo-friendly or adaptable.

Monday Balsamic Glazed Pork Chops + Balsamic Sauteed Mushrooms + Salad with Balsamic Dressing
It’s Balsamtastic!  (omit the sugar in the chops recipe to keep it paleo)

TuesdayChicken Fajitas + Fried Plantains + guacamole
The fajitas recipe requires some substitutions to keep it paleo.

WednesdayAutumn Stew

ThursdayCoconut Flour Pan Fried Cod + Balsamic Roasted Cauliflower + Asparagus
The cauli recipe calls for parmesan (not paleo), but we may opt to use some grassfed cheese instead

Friday— Steak + leftovers
