As I mentioned in my last post, I am doing a 60 day “Paleo” challenge, where I’m eliminating all grains, dairy, and sugar from my diet. Thus some of my dinners may have more kooky ingredients than you are used to. If you are not a “Paleo” person, you can most likely sub normal things like odder ingredients. But then again, if you try a new recipe and like it — I’d love to hear about it!
Monday — Texas Chili
Tuesday— roasted chicken + veggies
Wednesday— shrimp tacos (skip the sour cream sauce) in lettuce wrap with cabbage and guac
Thursday— Something with leftover chicken
