Spiced Frosted Nuts

Making these sweet & salty nuts is another Christmas tradition — we found this recipe in the Washington Post years ago.

Yield:  1 1/4 pound nuts or ~16 servings

Notes:  Recipe can easily be doubled, but you’ll need two baking sheets rather than one.

  • Butter or non-stick spray for baking sheet OR parchment paper / silicone liner
  • 1/3 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 1 large egg white
  • 1/4 tsp sea salt
  • 1 pound (~4 1/4 cups) pecan or walnut halves (we prefer pecans)

Adjust oven rack to middle position and preheat oven to 300 degrees.

Lightly coat large rimmed baking sheet (jelly roll pan) with butter or oil (or use parchment paper or silicone liner).

In a large bowl, stir together granulated and brown sugars and cinnamon until well blended.  Set aside.

In a medium bowl, use a fork to beat together the egg white and salt until frothy.   Add the nuts and toss until each nut is completely coated.

Add the sugar mixture to the nuts (or vice versa) and stir until each nut is completely coated.

Turn the nuts onto the prepared baking sheet, spreading the mixture to form an even layer.  Bake the nuts, stirring well every 10 minutes, until crisp and dry — 30 to 40 minutes.

Stir again and transfer the pan to a wire rack to cool to room temperature.

Store in an airtight container;  up to 1 week at room temperature or one month in the fridge.
