
Happy Labor Day! We’ve had an activity-filled weekend and I’m enjoying a little down time today to catch my breath and get geared up for the first week of school. I am looking forward to the structure and routine that comes with a school schedule, because things were kind of loosy goosy in cooking department over the summer.
Here’s this week’s plan:
Monday – grilled steaks and asparagus
Tuesday — grilled chicken with tbd veggies (maybe green beans)
Wednesday — chicken enchiladas
Thursday — shrimp tacos!
Friday — homemade pizza

I’m looking forward to the routine also. Cooking at my house has been really unorganized this summer as well. Did you already give away the lunch kit? We’re keeping it simple this week, steaks today, enchiladas, quesadillas/chalupas, mac cheese, and meatloaf. What I really need are meals that I can make ahead and freeze when I’m in Oregon that Dr. J can heat up. Any ideas?
