Black Bean Falafel

This is a recipe I’ve been making for several years and could have sworn already had it up on my blog, but alas, I guess I never got around to it.

I got it from a friend, who I think said she got it from Cooking Light, but I haven’t found it online anywhere, so here’s her/my version.

Black Bean Falafel aka Black Bean Burgers

I like this recipe because it's a good way to get protein without meat and it's comprised of ingredients I usually have on hand.
Ingredients
  • 1 can black beans, rinsed and drained
  • ¼ cup finely ground tortilla chips
  • 1 Tbsp cilantro, chopped
  • 3 Tbsp chives or scallions, chopped
  • ½ cup monterey jack cheese, shredded
  • salt & pepper to taste
  • 1 large egg white
  • 2 pitas, halved
Instructions
  1. Light mash beans with a fork or potato masher in a large bowl.
  2. Add remaining ingredients (except the pita) to black beans and mix by hand until well combined.
  3. High skillet on medium-high heat with 1 Tbsp olive oil.
  4. Form 4¼ inch patties and cook for approximately 3 minutes on each side.
  5. Serve by placing falafel into pita halves and top with avocado slices or guacamole
Notes
I usually use scallions instead of chives because it's what I have on hand. I also typically cook it on my George Foreman electric griddle -- I spray it with non-stick spray first and it cooks in half the time since it heats both sides at once. I do not usually make 4 uniform patties, I typically make 2 large patties and 3 smaller ones, since that's the way our family eats. It works out fine. Also -- this is a great meal for kids to help make! Mine love to smash the black beans and/or the tortilla chips. It's also a great way to use up those chip crumbs at the bottom of the bag.

Here’s how they look before cooking.  You can see the black beans don’t have to be mashed to a pulp.

The finished product.  In this case, I was out of pitas, but slathered in guacamole, nobody complained.
