Menu Plan Monday March 28th

Well, it’s the last week of the month and I’ve pretty much already spent our grocery budget, so we’re going to try and make do with what we have for the rest of the week.

Here’s what I’m planning:

MondayPineapple Pork Chops w/brown rice + broccoli + salad

Tuesday:  afternoon soccer practice dictates this meal will be simple and in the crockpot.   I’ll do a basic shredded BBQ chicken in the crockpot + peas & corn + baked beans.

Wednesday:  Something seafood — I bought some salmon and was thinking of doing a honey mustard recipe, served with cous cous and who knows what for a green veggie green beans.

Thursday:  Rachel Ray’s Spiced Stewed Zucchini over pasta.

Friday:  possibly an eat out night.  If not I’ll probably do homemade pizza or breakfast for dinner.

Saturday:  tentatively beef with broccoli or taco salad.

    I am working on a post for Chili Lime Salmon–a quick preview–if you wanted to use it for your Wednesday night salmon–basically a “wet rub” of 1 tablespoon EVOO, juice and zest of a lime, some chili powder, garlic powder, salt and pepper to taste. I spread it on top of the salmon and broiled it under our broiled for about 5 -7 minutes.

    Just a thought. 🙂
